Easy Peasy Roasted Brussels Sprouts

Whether you have jumped on the brussels-sprout bandwagon, or you still consider yourself “brussel-phobic”, I urge you to try this recipe.

Nearly everyone I have made these for has been won over by the crunchy, salty-sweet flavor these mini cabbages take on during the roasting process. The flavor is only enhanced by the nuttiness a sprinkle of pine nuts in the last few minutes of cooking adds to the dish. These tender morsels make a great side for a weekday dinner or for entertaining. I have even been known to make them for myself as a main course on a night when I don’t feel like cooking.

The best part of this recipe is that it is easy!  A few minutes of prep and 20 or so minutes in the oven and the dish is ready to go with minimal fuss!

Roasted Brussels Sprouts

This recipe is so easy, it doesn’t warrant a full written recipe. Feel free to adjust to your liking. You will need olive oil, salt (preferably kosher or coarse ground sea salt), brussels sprouts (fresh are great, but frozen petite are more than fine), a small amount of pine nuts and freshly grated Parmesan cheese are both optional. I sprinkle with cheese when I am making this as a side dish for company or a holiday meal.

Process:

Preheat oven to 425°-450°. If making a small amount like I was today, pre-heat your toaster oven to 425°.

You have options when it comes to prepping your mini cabbages. you can leave them whole, halve them, or, to reduce cooking time, you can quarter them as I have done here. Place prepped cabbages in a bowl and toss with enough olive oil to coat– don’t skimp too much. sprinkle with a liberal amount of kosher salt.

Place sprouts on a pan and slide into the preheated oven until browned slightly (because these were cut up they only took 12-15 min, but if they were larger, they can take up to 30 minutes). Toss once or twice during baking to help them bake evenly. When they look nearly finished, sprinkle a few pine nuts on top of the sprouts and return to the oven for a couple of minutes to let nuts toast.

Serve immediately. For a quick, healthy lunch, I paired these with a baked sweet potato topped with some cottage cheese.
